Israeli Chopped Salad
Israelis have one of the world’s highest rates of vegetable consumption, and fresh chopped salads are a part of almost every meal. This basic salad fits naturally with many of our favorite Israeli dishes, from breakfast to dinner and everything in between. It is much more filling than lettuce-based salads, showcases the best of our local vegetables and herbs, and packs in tons of vitamins and minerals along the way. With five minutes and a cutting board, this delightfully colorful salad can be yours!
Ingredients
3 tomatoes
3 small cucumbers
1 red onion
½ cup chopped parsley
¼ cup chopped mint
1 tbsp. za’atar blend (optional)
¼ cup olive oil
¼ cup lemon juice
½ cup raw tahini (available in our Delicious Israel Culinary Kit!)
Salt and pepper
Optional inclusions: ½ chopped bell pepper (yellow, red, orange, green all work well for color), ½ chopped lemon (with rind)
Directions
Chop vegetables into small cubes. Mix well with the herbs, spices, olive oil, and lemon juice. Drizzle raw tahini over salad, as desired.
